Cheesy Sausage and Potato Casserole

Taste: This is comfort food at its best. It isn't a complicated recipe, and there aren't a lot of ingredients. We probably make this once a month, definitely a favourite around here.
Amount: Serves 6-10.
Time: 1 1/2 hours.

  • 3-4 potatoes, cubed
  • 4 tablespoons flour
  • 4 tablespoons butter
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • .5 lb Velveeta, cubed
  • 1 cup cheddar, shredded
  • medium onion, chopped
  • 1 tablespoon olive oil
  • 1 lb smoked sausage
  • 1/8 teaspoon paprika
Set a big pot of water to boil. Preheat the oven to 350 degrees.

In a large skillet with oil over medium heat add the onions and cook until translucent. Chop the sausage into half moon shapes and add to the onions. Cook about 15 minutes. Remove from heat and set aside.

When the water is boiling add the potatoes and cook until fork tender. Drain.

Melt butter in a sauce pot over medium low heat. Stir in flour and cook about 2 minutes. Whisk in the milk and let thicken, whisk frequently. Season with salt and pepper. Gradually add in Velveeta and 1/2 cup of the cheddar cheese, stirring until melted.

In a lightly greased 13x9 baking dish gently combine the potatoes and sausage. Pour the melted cheese over top and gently stir. Sprinkle the remaining 1/2 cup of cheddar cheese on top and the paprika. Bake 45 minutes.
