Banana Pancakes

Taste: It is like eating a warm banana in the form of bread. Sounds odd, huh? But, it really is delicious. It is such a fun thing to do with brown bananas other than banana bread too. I like banana bread, but these were so much better. Turtle and I had them three days in a row.
Amount: 8-12 pancakes.
Time: 30 minutes.

  • 2 cups bread flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon brown sugar
  • 1/3 cup white sugar
  • 1 teaspoon cinnamon
  • 2/3 cup buttermilk
  • 1 tablespoon vanilla
  • 2-3 large ripe bananas, mashed
  • 2 tablespoons butter, melted
  • vegetable oil, to cook
In a large bowl, combine the dry ingredients - flour, baking soda, salt, brown sugar, white sugar, and cinnamon - and stir to combine.
Stir buttermilk and vanilla to combine, then add to the dry ingredients and stir until incorporated. The mixture will still be rather dry. Add in mashed bananas and mix to incorporate. Add melted butter and stir until smooth.
Heat a griddle with a tablespoon or two of oil to medium heat. Pour 1/3 cup of the batter onto the griddle. Cook about 2 minutes per side or until golden brown. Serve hot.
