Spaghetti and Meatballs

Taste: This is one of my all time favourite recipes. It is a great classic to pull out whenever, but it is also easy to make for a crowd with all the hands off simmering. It freezes well, so you can make it ahead of time or freeze half for later. The meatballs are tender, and the sauce is perfectly thick. It is just plain delicious.
Amount: Serves 4 - 6.
Time: 2-3 hours.

Ingredients:
for the sauce -
  •  2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 28 oz tomato puree
  • 28 oz tomato sauce
  • 2 teaspoons dried parsley
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 2 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup of water (or more)
for the meatballs -
  • 1/2 cup bread crumbs, divided
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1 teaspoon dried parsley
  • 1/2 cup Parmesan cheese, grated
  • 1 clove garlic, minced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 lb ground beef
for serving -
  • spaghetti
  • Parmesan cheese, to sprinkle on top
Directions:
To make the sauce, heat olive oil in a large pot over medium heat. Add the onion to the pot and saute until tender, 5-8 minutes. Add garlic and saute 1-2 minutes. Add the tomato puree, tomato sauce, parsley, basil, oregano, salt and sugar, stir until combined. Add water to thin out the sauce to your desired consistency, I swish the water in both the can of puree and sauce to get the residue out before adding it to the pot. Bring to a boil, then lower the heat to a simmer. Simmer for at least 2 hours.

To make the meatballs, in a bowl combine 1/4 cup bread crumbs with the milk and let sit for 10 minutes. In the meantime add the remaining ingredients to a large mixing bowl. When the soaked bread crumbs have set for 10 minutes add to the mixing bowl and mix thoroughly. Form the mixture into about 1 1/2 inch meatballs. Add the meatballs to the simmering sauce. Cover and let simmer until the meatballs are cooked through, about 45 minutes.

Cook spaghetti and top with sauce and meatballs. Garnish with grated Parmesan, if desired.
