It's Here!

I am just super excited to start solids with Turtle. Like, probably way too excited. And, I'm sure two meals on the floor in I'll be retracting the enthusiasm. But, maybe not! I think it will be lots of fun having meals with her. Watching her learn and develop skills with food.

Loving Lately - The Maxi

I love maxi dresses in the spring and summer, and just about year round in Florida. I especially love how it flows around your legs when you walk, keeping you cool with the created air. And, they are just so darn pretty. My go to maxi now has holes in it because kitty-cat used it as a scratching post when it was hanging on the back of a door (gee, thanks cat). I've been on a maxi hunt ever since. I particularly like 1, 3, and 7 above!

April Showers Bring Spring Flowers - week four

April 21st - 27th

Earth Day walking! There is a local nature walk that I've actually never gone to, and we weren't tempted to go to before because you can't take dogs. Since Turtle likes walks, we decided to check it out on Earth Day. It is a nice little 1/2 mile walk - lots of shade. Turtle takes nature very seriously.

Nature really makes you sleepy. It even rubbed off on LB, who stayed at home.

Behold, a smile! This is the first one we've gotten from her at the beach. Good beaching day too, pleasantly toasty. Turtle got her legs wet and then she kicked a nice hole in the sand. Daddy was impressed.

 We've been getting quality tummy time in lately. She waits whole minutes before getting pissed off.

Daddy has been anticipating the shoulder sitting from day one. Now she is big enough to enjoy it. The past times he's tried, she has been like what the hell is this?

After picking up a package of links and attaching crinkle monkey to her bouncer - that doesn't bounce anymore because somebody (me) is too lazy to go find new batteries - Turtle has been enjoying her bouncer more.

It is official, we have toesies! She was laying there just this morning sucking away on them while I was diapering.

Our tiny Irish dancer. She stomps her little leg when standing, and does a mean butt wiggle.

Look! More peaceful tummy time. It's like invasion of the pod baby. Before she'd scream immediately. Now she's gone as much as seven minutes being completely lovely.

 I stuff her cloth diapers right in front of her so she will look up to watch what's going on.

April Showers Bring Spring Flowers - week three

April 15th - 21st

I still hate this tub. I gave it a few tries at various stages, but it sucks. Well, it is fine if you don't actually want to wash your baby. They can sit and be wet and you can sit and hold them being wet. But, try sitting, holding, being wet, and attempting to suds up a baby in water in a bucket. I must not be talented enough for this tub. So, we sat and splashed in the water, then got a real bath in the sink.

She really goes to town in this thing nowadays. She can rotate the doo-dads, and fling the ma-bobs, and tug the thingies too.

We started off with some tummy time and then nap time encroached. It is exhausting laying down - I'm telling ya. Mommy got to sit and do nothing since only the camera was within reach.

Both the hubs and Turtle watching whatever movie I put on. Might have been Independence Day. Will Smith is the bee's knees.

Chicken Pot Pie

Taste: Rich, creamy, and homey.
Amount: I made 4 individual pot pies. It could stretch to 8 in small enough bakeware.
Time: 1 hour, plus bake time.
Source: Filling inspired by allrecipes and crust from Annie's Eats.

These are the pot pies I decided to make for Easter. They are such perfect comfort food. Warm delicious inside, with a flake-y thick crust outside. They are sure to fill you up. It took me three days to finish mine off. I love that you can make and bake these, then freeze them for later. One of these days maybe I will actually freeze meals in advance. I guess I'm just not that forward thinking enough.

Chicken Pot Pie
For the filling -
  • 1 lb chicken, cubed
  • 1 cup frozen carrots
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup potato, cubed
  • 1/2 cup celery, chopped
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup onion, chopped
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon poultry seasoning
  • 2 cups chicken broth, plus
  • 1 cup milk
For the crust - 
  • 16 tablespoons (2 sticks) cold unsalted butter
  • 3 cups flour
  • 10 oz cream cheese, chilled
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg
Preheat the oven to 375 F.

Combine the chicken, carrots, peas, corn, potatoes, and celery in a large pot. Add chicken broth to cover. Bring to a boil for 15 minutes. Drain, reserving 2 cups of the chicken broth. Set aside.

In a saucepan, over medium heat melt the butter and cook the onions until soft and translucent. Stir in flour, salt, pepper, garlic powder, and poultry seasoning. Slowly add in the reserved chicken broth and milk. Simmer over medium-low heat until thickened.

Combine the chicken and veggies with the gravy. Spoon into 4-6 individual oven-safe dishes.

To make the crust, cut the butter into 16 pieces. In the bowl of a food processor fitted with a metal blade, pulse the butter with the flour until crumbly. Add the cream cheese, salt, and pepper, pulsing just until the dough forms a ball. Transfer the dough to a lightly floured work area, and roll the dough out to about 1/4-inch thickness. Cut the dough rounds to be about 1 1/2 inches larger than the individual pot pie dishes. Lay the dough round on top of the filled dishes. Beat the egg, and brush the tops of the dough lightly with the beaten egg.

Place the pot pies on a baking sheet. Place in the preheated oven for 20-25 minutes, or until golden  brown. Serve immediately.

April Showers Bring Spring Flowers - week two

 April 8th - 14th

Turtle got shots at her 4 month check-up. Poor baby - although she got over it quickly.

We went out to the Irish pub for our 2nd wedding anniversary. Turtle was so good. She dozed most of the meal and then sat on daddy's lap to scope out the joint. 

 Trying out our zoo membership. I'm not sure Turtle saw much more than people, but it was a fun trip nonetheless.

Turtle enjoyed eating sand this beach trip.

 We got in several outings this week, but there was plenty of playtime too. I find it cute when she plays on her side instead of her back.

So much sitting practice. It is the best watching her get stronger. She just needs a little hand holding for balance.

April Showers Bring Spring Flowers - week one

April 1st-7th

I think we have the worst luck with timing our beach trips. Every previous trip we've ended up arriving later than planned and realizing our mistake when the air beach side is chilly. Nice enough for a quick walk, but too cold for toe dipping. This time we went right in front of a storm. We did get to hang out for a bit before it started to rain though.

We often hang out on the dining room table in skivvies practicing hand eye coordination.Who doesn't?

 Turtle has upgraded to the shorter Simpson's Battle of the Sexes game box.

She naps so dammed adorably. It is a shame it never lasts longer...

 I think it suits her.

Turtle is sporting her Salve onesie from her godmother, the Latin teacher (it's not dead...it's just Roman around - yeah, I went there).
